Because on Earth the light from the stars illuminates the air in front of us. While in space there's nothing for the light to illuminate.

It's possible. Soyuz and other crafts arent shielded nearly as well as the rest of the ISS, which is heavily shielded. And they're constantly being bombarded with objects.
To put into perspective, the LDEF was put into orbit in 1984 and recovered in 1990. They found over 5000 large impacts and 30,000 small ones.

Or about 67 acre-feet. For comparison, California's reservoirs have a capacity of slightly over 40 million acre-feet.
Obviously we should try to conserve fresh water everywhere, but I think we've got bigger fish to fry.
