In the North they're pretty hard core about the sauce, that isn't the case in Ho Chi Minh City (where OP ate this). There many enjoy some spice and flavor in their Pho...

I usually see it at Thai restaurants, and it has cashews, raisins, tomatoes, and onions. I’ve also never seen it served in a pineapple. One of my favorites.

quick cooking oats
sea salt
eden brand, "kuzu" (it's a thickener available on amazon)
eden brand, "mochi"
sliced apple
tahini/sesame butter
that's it! just stir it and let it simmer a long time with a lid.

Pop’s Beef is my fav but hell yeah! Pop’s makes their own hot peppers. They slice the jalapeno pepper paper-thin. The peppers are not pickled for long (or at all) before they are put in oil so they have an awesome crunch and they’re not too spicy. They add a little fresh element to the beef experience. Zesty. Yum. Cheers to your beef!
